“All you need is Love and Nachos” is the catchphrase for the popular food truck Nacho Pig. Run by Shannon Clark and his family, Nacho Pig serves their signature nachos and tacos at various events. Most recently, the Nacho Pig was at Darke County Fairgrounds for the Food Truck Rally.
Shannon Clark and his family have been running Nacho Pig for 12 years.
“It was started by my wife and I,” Shannon Clark said. “The basic idea was something that my wife’s family used to make at home; we just took it to another level.”
Making loaded nachos and street tacos, Nacho Pig describes their menu as “creative yet simple.” Their most popular menu item is the Classic Nacho Pig, a bed of nachos topped with their smoked pulled pork, then layered with their rice, black beans, shredded cheese, lettuce, sour cream, their homemade guacamole, pico de gallo, and their signature BBQ sauce.
Shannon Clark recommends the Bourbon brisket tacos, their tender, smoked shredded brisket tossed in their signature bourbon BBQ sauce, line slaw, pico de Gallo, and topped off with their smoky lime-cilantro cream sauce.
“At events like this, we have served hundreds of people, which amounts to hundreds of pounds of food,” Clark said.
They have won several awards for their food truck. They were voted People’s Choice in 2016 at the Miami County Food Truck Rally Competition, People’s Choice in 2018, 2019, and 2020 at the Darke County Food Truck Rally Competition, Most Epic Sandwich in 2018 at the Ohio Renn Fair, and many more.
Having a traveling truck works well for the Clark family. While they usually stay within two hours of Greenville, they have done events as far as Florida. Being able to travel allows the flexibility to pursue additional things, one of which is quite musical.
“We also play in a traveling family band,” Clark said. “Shannon Clark & the Sugar.”
Shannon Clark & the Sugar makes “Midwest Americana Soul Music.” Since releasing their first single, “Carry Me,” in 2020, the band has grown to have over 16,000 monthly listeners on Spotify. Their first full-length album, “Marks on the Wall,” was released in 2021 and was produced by Grammy Winner Mark Howard.
